New England Lobstah rolls into Boise

Being thousands of miles away from New England, it can be hard to find fresh, East Coast lobster, until now. Lorin Smaha, a New Hampshire native, is bringing Freshie’s Lobster Co. to The Warehouse Food Hall.



Lorin’s background in culinary arts and her passion for some good ole New England lobstah inspired her to bring fresh seafood to the Western Mountain states. In 2009, Freshie’s began serving lobster to guests at the Park Silly Market in Salt Lake City, Utah. It quickly gained popularity and expanded into a café. Freshies now has two Utah locations and a food truck.


Freshie’s puts a big focus on sustainability and freshness, with a promise of “From shore to door in 24.” Freshie’s purchases lobsters from Maine that are then shipped and delivered to the restaurant in under 24 hours for maximum freshness and flavor.


We caught up with Lorin to talk more about Freshie’s Lobster Co. and The Warehouse.


What would you say is unique about your business?

Our lobster is shipped fresh, and we ship the buns in as well. We also won the World’s Best Lobster Roll in Maine, voted by New Englanders.


At The Warehouse, it’s going to be all about “experience” and “adventure.” What do those two words mean to you? What does the word “Food Hall” mean to you?

I love the experience a food hall brings to people who really appreciate great food. Adventure is changing the style in which we go out to dinner. This allows the consumer to try completely different types of foods and get different tastes at one seating.


When you hear “The Warehouse,” what does that mean to you?

A modern but welcoming spot integrating the old with the new. Bringing life back to an old run-down building with lively food and atmosphere.


What got you interested in The Warehouse?

The location. I am really excited to bring the best lobster roll in the world to Boise!


Why do you want to be a part of The Warehouse?

I think it’s going to be executed really well with great food vendors and a great atmosphere in the surrounding area.
